Grow Organic Summer Squash
If you are looking for a big producer and fast growing summer vegetable, than look no further than summer squash. Not only will 2 plants be more than enough for about 5 people but from seed to fruit is only about 45-50 days!
My favorite is zucchini. Not only does it taste great when barbequed but this meaty vegetable is great in casseroles, lasagna or steamed with a little olive oil and garlic. It is also a good source of vitamin C!
They are heavy feeders so be sure to whip up some compost tea every couple weeks. They also like a lot of sun and water so plant them accordingly.
I am not the only who likes zucchini. A couple of pests to watch for include: Whitefly, aphids (of course), pickleworm, and slugs.
Easy to grow and large amounts of fruit make summer squash a perfect vegetable for first time gardeners.

Is there a rule of thumb for when I should pick and eat? I am growing yellow summer squash and have one that is about 4 or 5 inches long. I am not sure what is the usual size to harvest them.

Thanks for stopping by! I would pick them when they reach 7-8 inches long. If you let them get much larger you will start to sacrifice taste. Hope this helps ![]()
